  • 2 large sweet potatoes, peeled and diced
  • 1 red capsicum (bell pepper), diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:
