Ingredients:

  • 200g quinoa (whole, uncooked)
  • 1 tablespoon ground flaxseed (linseed)
  • 375ml milk (your choice)
  • 1 teaspoon vanilla paste
  • 0.25 teaspoon ground cinnamon
  • 2 free-range eggs
  • 0.5 teaspoon bicarbonate of soda (baking soda)
  • 2 grated apples
  • Olive oil or ghee for cooking

Instructions:

  1. Combine the whole quinoa, flaxseed, and milk in a bowl.
  2. Allow it to soak for a minimum of 1 hour, or for the best results, leave it to soak overnight.
  3. Transfer the soaked mixture to a high-performance blender, adding the vanilla, cinnamon, eggs, and bicarbonate of soda.
  4. Blend until the mixture achieves a smooth and creamy consistency.
  5. Take it out of the blender and gently fold in the grated apple by hand.
  6. Cook the pancake batter in a pan over low-to-medium heat until it becomes a lovely golden color.
  7. Serve your pancakes with either raw honey or organic maple syrup.
