Ingredients
- 600g chicken thigh fillets, diced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp sea salt
- 1/2 tsp black pepper
- 8 bamboo skewers, soaked
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, oregano, salt and pepper.
- Add diced chicken and marinate for at least 30 minutes (or overnight for best flavour).
- Thread the chicken onto the skewers evenly.
- Preheat grill or barbecue to medium-high heat.
- Cook skewers for 10–12 minutes, turning occasionally until golden and cooked through.
- Serve with warm pita, salad and tzatziki.
Notes
- Use metal skewers if preferred – no need to soak.
- For extra flavour, add 1 tsp smoked paprika to the marinade.
- Leftovers can be used in wraps, lunchboxes or over rice.
- To make it little kid-friendly, serve without skewers.
