Chicken Katsu

Ingredients:
- 450g boneless, skinless chicken breast
- 30ml extra virgin olive oil
- 90g all-purpose flour
- 2 large eggs
- Salt and pepper to taste
- Tonkatsu sauce (optional)
Instructions:
- Preheat your oven to 200°C (392°F) and position one of the oven racks in the upper-middle part.
- Line a baking sheet with parchment paper and set it aside.
- Prepare three bowls: flour, whisked eggs, leave the third bowl empty for now (this will be for the panko breadcrumbs).
- In a small pan over medium heat, add the breadcrumbs and olive oil. Toss to coat evenly. Season with salt and pepper and cook until breadcrumbs are golden brown. Turn off the heat and transfer the breadcrumbs to the third bowl.
- Place the chicken breast on a cutting board and pound it to about 1 ½cm thickness.
- Dip each piece in the flour, then the egg, and finally the panko breadcrumbs. Press gently to coat the chicken evenly on each side. Arrange the coated chicken pieces on the prepared parchment-lined baking sheet.
- Bake in the preheated oven for 12-15 minutes on each side or until the chicken's internal temperature reaches 75°C (165°F).
- Serve the Chicken Katsu with tonkatsu sauce if desired.
Notes:
- Adjust the seasoning to your taste by adding more or less salt and pepper.
- Feel free to customize the recipe with your favorite dipping sauce or condiments.
