Ingredients:

  • 1 large cucumber, thinly sliced
  • 1 large carrot, julienned or grated
  • 1 cup red cabbage, thinly sliced
  • 1 cup mixed greens (such as spinach, lettuce, or rocket)
  • 2 spring onions, finely chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup sesame seeds, toasted

For the Dressing:

  • 3 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Pinch of red pepper flakes (optional, for a bit of heat)

Instructions:

  1. Slice the cucumber thinly using a mandoline or a sharp knife.
  2. Julienne or grate the carrot.
  3. Thinly slice the red cabbage.
  4. Chop the green onions, coriander, and mint leaves.
  5. Toss all the vegetables and herbs together in a large mixing bowl.
  6. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and red pepper flakes if using. Adjust sweetness and saltiness to taste.
  7. Pour the dressing over the prepared vegetables and herbs. Toss gently to coat the salad evenly with the dressing.
  8. In a dry pan over medium heat, toast the sesame seeds until golden brown and fragrant. Be careful not to burn them. This will take about 2-3 minutes. Remove from heat and let them cool slightly.

Sprinkle the toasted sesame seeds over the salad just before serving to add a nutty crunch.
