Ingredients:

  • 2 1/2 cups organic rolled oats
  • 4 cups milk (plus extra to serve)
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans
  • 1 cup maple syrup
  • Zest of 2 oranges
  • Ground cinnamon

Instructions:

  1. To make the oats, simply mix the oats, milk, and vanilla in a bowl, cover, and chill in the refrigerator overnight.
  2. The next day, preheat the oven to 200°C and line a baking dish with baking paper. In the dish, combine the pecans, half of the maple syrup, half of the orange zest, and a teaspoon of salt flakes. Roast for 15 minutes until the pecans are caramelized, cool to room temperature, then roughly crush. Store in an airtight container until you're ready to use.
  3. To serve, divide the oat mixture among serving bowls and top with the pecan mixture. Drizzle with the remaining maple syrup and sprinkle with cinnamon and remaining orange zest. Serve with extra milk and enjoy your delicious and healthy breakfast!
