Baked Spelt Cinnamon Doughnuts

Ingredients:
- 2 cups spelt flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup maple syrup
- 1 cup whole milk
- 1/4 cup ghee
- 2 large eggs
- 1/2 tablespoon vanilla extract
- To coat:
- 1/4 cup coconut sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Instructions:
- Preheat the oven to 190°C (375°F). Butter a 12-hole doughnut or muffin pan (to make 12 donuts in total).
- In a large mixing bowl, whisk together the spelt flour, baking powder, salt, and cinnamon.
- In a small saucepan, combine the maple syrup, milk, eggs, and vanilla extract. Whisk well.
- Heat the saucepan over low to medium heat and add the ghee. Whisk until the ghee is melted and mixed well with the other ingredients. Be careful not to overheat the mixture.
- Add the contents of the saucepan to the dry ingredients and mix until just combined.
- Spoon the batter into the prepared pan, filling each mould up to 3/4 full.
- Bake at 375°F (190°C) for 12 to 15 minutes or until fully cooked. You can test with a toothpick.
- Remove the doughnuts from the pan and let them cool on a wire rack.
- In a small plate, combine some coconut sugar and cinnamon.
- Brush each doughnut lightly with melted butter and dunk it into the cinnamon sugar mixture, coating well on all sides.
