Ingredients:

  • 2 cups spelt flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup water
  • 25ml olive oil, plus extra for brushing
  • 1/4 cup fresh chopped herbs (e.g., tarragon, thyme, rosemary, oregano)
  • Tarragon flowers (optional)
  • Sea salt flakes and sesame seeds (optional) for sprinkling

Instructions:

  1. In a large bowl, mix the flour, baking powder, salt, and chopped herbs.
  2. Add water and olive oil to the mixture. Stir with a fork initially, then use your hands to form a soft dough. Add a few drops of water if needed to reach the right consistency.
  3. Cover the dough and refrigerate for an hour to relax.
  4. Preheat the oven to 220ºC (425ºF) and line baking sheets.
  5. Turn out the chilled dough onto a lightly floured surface. Roll the dough as thin as possible without tearing.
  6. Work with several pieces at a time, letting them rest and then rolling a little. Add tarragon flowers if desired.
  7. Place the dough rounds on the baking sheets and brush them with olive oil. Sprinkle with sea salt flakes and sesame seeds, pressing lightly into the dough.
  8. Bake for 6-7 minutes or until blistered, golden, and dry. Watch closely to avoid burning.
  9. Remove from the oven and let cool on a wire rack until crispy.
  10. Store in an airtight container or tin to keep fresh for up to a week.
