Herb and Olive Oil Crackers

Ingredients:
- 2 cups spelt flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 cup water
- 25ml olive oil, plus extra for brushing
- 1/4 cup fresh chopped herbs (e.g., tarragon, thyme, rosemary, oregano)
- Tarragon flowers (optional)
- Sea salt flakes and sesame seeds (optional) for sprinkling
Instructions:
- In a large bowl, mix the flour, baking powder, salt, and chopped herbs.
- Add water and olive oil to the mixture. Stir with a fork initially, then use your hands to form a soft dough. Add a few drops of water if needed to reach the right consistency.
- Cover the dough and refrigerate for an hour to relax.
- Preheat the oven to 220ºC (425ºF) and line baking sheets.
- Turn out the chilled dough onto a lightly floured surface. Roll the dough as thin as possible without tearing.
- Work with several pieces at a time, letting them rest and then rolling a little. Add tarragon flowers if desired.
- Place the dough rounds on the baking sheets and brush them with olive oil. Sprinkle with sea salt flakes and sesame seeds, pressing lightly into the dough.
- Bake for 6-7 minutes or until blistered, golden, and dry. Watch closely to avoid burning.
- Remove from the oven and let cool on a wire rack until crispy.
