Family Fish Pie

Fantastic Fish Pie

Ingredients:
- 5 large potatoes, peeled and diced into approximately 3 cm cubes
- Salt and pepper, to taste
- 2 handfuls of chopped leafy greens such as spinach
- 1 onion, finely chopped
- 1 carrot, chopped or diced small, or grated
- 1-2 celery stalks, finely diced
- Extra virgin olive oil, for frying
- 250 ml cream
- 2 good handfuls of grated Gruyere, Parmesan, or a mix of both
- Juice of 1 lemon
- 1 heaped teaspoon Dijon mustard or English mustard
- 1 large handful of flat-leaf parsley, finely chopped
- 1 tablespoon of chopped tarragon leaves
- 500-650g wild-caught fish, cut into chunks
- Butter, to taste, for the mashed potatoes
- Nutmeg, optional, for a light grating in the mash
- White pepper (optional, but recommended for this dish)
Instructions:
- Preheat your oven to 220 degrees Celsius (425°F).
- Prepare all your ingredients: chop the vegetables, juice the lemon, and have everything ready to go.
- Parboil the diced potatoes in salted water for a couple of minutes.
- In a separate pan, sauté the onion, carrot, and celery in olive oil for about 5 minutes. Then, add the cream and bring it to a boil. Stir in the spinach leaves and mustard until wilted.
- Place the chunks of fish in an oven dish. Add chopped parsley, tarragon, lemon juice, and grated cheese. Pour over the vegetable and cream mixture, then mix everything together.
- Once the potatoes are cooked, drain them and mash them with plenty of butter. Season the mash with salt, pepper, and grated nutmeg to taste. Spread the mashed potatoes evenly over the top of the fish mixture.
- For a golden finish, you can drizzle a bit more olive oil or melted butter over the top, or sprinkle on extra cheese.
- Bake the dish for about 25-30 minutes, or until it's golden brown.
- Serve with a side salad or steamed greens for a complete and nourishing meal.
