METHOD
- In a large fry pan, gently heat spices on a low-med heat. Add ghee/ olive oil.
- Add onion and garlic, gently fry until softened.
- Add tomato, turn up heat a little and gently bring to the boil.
- Add cooked lentils, bring to the boil again (add a little water if the sauce is looking very thick)
- Crack your eggs into the pan and cover for 2 minutes.
- Remove lid and sprinkle greens around eggs and into sauce. Cover again and cook for about 6 minutes (this depends on you you like your eggs).
- Once the eggs are cooked to your liking, serve immediately with fresh parsley and season as desired.
