Fermented Carrot Sticks

INGREDIENTS

500 ml warm filtered or spring water

4 tsp sea salt

4 medium/large carrots peeled and cut into sticks

1 clove of garlic smashed

1 sprig of herbs (e.g. tarragon/ fennel/ thyme/ dill)



METHOD

  1. Dissolve the sea salt in warm water to make brine.
  2. Pack the carrots tightly into a clean 500ml jar and pour the brine over them, leaving 2.5cm of space at the top.
  3. Use a fermenting weight or a cabbage leaf on top of the carrots/brine if desired and close the jar with a lid or other device.
  4. Let the jar sit at room temperature for 2 days to 2-3 weeks depending on the desired taste. The longer it ferments, the more flavour it will have.
  5. Taste along the way until it is to your liking. Store any extra brine in the fridge or use it for another batch.
