METHOD
- Dissolve the sea salt in warm water to make brine.
- Pack the carrots tightly into a clean 500ml jar and pour the brine over them, leaving 2.5cm of space at the top.
- Use a fermenting weight or a cabbage leaf on top of the carrots/brine if desired and close the jar with a lid or other device.
- Let the jar sit at room temperature for 2 days to 2-3 weeks depending on the desired taste. The longer it ferments, the more flavour it will have.
- Taste along the way until it is to your liking. Store any extra brine in the fridge or use it for another batch.
