Mini Impossible Quiches

INGREDIENTS

1 cup additive-free bacon, finely diced

5 pasture raised eggs

¼ cup spring onion finely sliced

½ cup corn kernels

1 cup finely chopped leafy greens such as spinach or kale

12 cherry tomatoes, quartered

¾ cup grated Gruyere cheese

1 handful of finley chopped herbs – parsley, garlic, chives etc

Salt & Pepper to taste

37g spelt flour

½ teaspoon of baking powder

Olive oil (for greasing the tray)



METHOD

  1. Preheat your oven to 200c.
  2. In a frypan, fry the bacon on a low heat until slightly golden. Drain the fat and allow the bacon to cool slightly.
  3. Combine the cooked bacon, spring onion, corn, leafy greens, gruyere, salt and pepper in a large bowl.
  4. Add the sifted spelt flour and baking powder, and mix to coat the ingredients.
  5. Add the eggs and mix well with a fork Divide into a greased 12-muffin tray, then add 4 pieces of tomato to each muffin.
  6. To cook the muffins, add to the oven at 200 degrees Celsius and bake for 15 minutes. Keep an eye on them and remove from the oven once they turn slightly brown, bouncy, and pull away from the edges of the muffin case.
