Lunchbox Meatballs

INGREDIENTS

65g butter

1 onion finely chopped

½ tsp dried oregano

½ tsp dried basil

½ tsp dried marjoram

natural salt 400g minced beef/ chicken/ lamb/ pork/ mix of beef and pork

2 egg yolks

3 tbs olive oil

parsley to garnish



METHOD

  1. Melt half the butter in a fry pan over a low heat, add onion and cook, stirring for 5 minutes or until transparent.
  2. Transfer the onion to a bowl, add mince and egg yolk. Mix well with your hands. Shape into 12 balls.
  3. Heat olive oil and remaining butter in the same pan over a medium heat and the meatballs to cook, turning frequently for 15 minutes- until golden brown.
  4. Garnish with parsley and serve.
