METHOD
- Melt half the butter in a fry pan over a low heat, add onion and cook, stirring for 5 minutes or until transparent.
- Transfer the onion to a bowl, add mince and egg yolk. Mix well with your hands. Shape into 12 balls.
- Heat olive oil and remaining butter in the same pan over a medium heat and the meatballs to cook, turning frequently for 15 minutes- until golden brown.
- Garnish with parsley and serve.
