Kachumber Salad

The perfectly fresh accompaniment to any indian style dish.
INGREDIENTS
2 cups chopped cucumber
2 cups chopped fresh tomatoes
¼ teaspoon salt
1 cup chopped red onions
½ teaspoon ground cumin
1 tablespoon fresh lemon juice
salt to taste
Fresh corriander and mint
METHOD
Place the cucumber and tomatoes in a glass bowl. Sprinkle over the salt, stir well, and set to one side.
Place the chopped red onions in mesh sieve and rinse them in cold water for 15 seconds.
Pour away any of the collected juice from the cucumber and tomato.
Add the red onions, cumin, cayenne, and lemon juice to the bowl.
Scatter over the chopped fresh herbs.
Toss and check your seasoning.
Serve immediately.
