French Carrot Salad

Carrots are probably one of the most nutritious foods you can feed your family. They are particularly beneficial for gut health and one of the beast foods for assisting with hormone balancing.
INGREDIENTS
3 Tbsp. extra-virgin olive oil
3 Tbsp. fresh lemon juice
1 tsp. raw honey
½ tsp. ground cumin
salt
450g carrots, grated
flat-leaf parsley, crated
METHOD
In a medium bowl, whisk together 3 Tbsp. extra-virgin olive oil, 3 Tbsp. fresh lemon juice, 1 tsp. raw honey, and ½ tsp. ground cumin. S
eason with salt.
Add 450g carrots, coarsly grated and toss to coat, adjusting the dressing to taste.
Stir in ½ cup coarsely chopped flat-leaf parsley and set aside to marinate for at least 30 minutes and up to 2 hours before serving.
