Chia Pudding

Chia is high in omega 3's, protein and fibre to support healthy digestion and keep tummies satisfied. serve for breakfast or as a satisfying snack. The base recipe will last a few days in the fridge, so you can top with what ever suits your mood!

INGREDIENTS

3 tablespoons chia seeds

1 teaspoon vanilla extract

250 ml milk of your choice (coconut or nut milks work well here)

fresh fruits to serve

coconut milk to serve

pure maple syrup to serve

tahini to serve



METHOD

1. Combine the chia seeds, vanilla and almond milk into a bowl or jar and mix well.

2. Rest for 15 minutes then give it a good stir to distribute the chia throughout the milk as it thickens.

3. Cover the bowl and refrigerate overnight.

4. Serve with your choice of sliced fruits and a drizzle of coconut milk, pure maple syrup or tahini.



TOPPING IDEAS:

Drizzle with black tahini and garnish with marigold petals. Top with stewed apple then top with flaked almonds and cinnamon for a delicious apple pie chia pudding.
