Mango Gummies

These Golden Mango gummies are not only fun and delicious, but serve as a functional food providing wonderful properties to help reduce inflammation, assist the immune system, promote a healthy gut, nourish the skin and accelerate wound healing.

The combination of turmeric with coconut milk and gelatin also facilitates its absorption and activation.

Adding a little vitamin C and zinc will boost the healing and immune promoting properties of these gummies even more (see notes).

For this recipe you'll need silicone candy/ ice cube moulds.

INGREDIENTS

½ cup pureed mango

½ cup coconut milk

1-2 tablespoons raw honey (do not give honey to children under 12 months)

½ teaspoon turmeric powder

3 tablespoons grass-fed gelatin powder (I used @nutraorganics )



METHOD

1. Purée mango and turmeric together.

2. In a small (cold) saucepan add the coconut milk and then sprinkle the gelatin evenly. Allow to sit for a few minutes until absorbed (bloom).

3. Place over a low heat, whisking until dissolved. Do not let it get to a boil.

4. Transfer to a glass jug and add honey.

5. Pour the mango mixture into the gelatin mixture whisking as you pour to prevent lumps. If you are adding a nutritional supplement* this is a good time to add it- just make sure the mixture is not hot.

6. Pour the liquid mixture into your moulds and place in the fridge for an hour or so to set

7. Gently remove your gummies from the moulds and store in the fridge in an air-tight container for 1-2 weeks.



*Notes: I like to add a vitamin C nutritional supplement to these for added anti-inflammatory, immune and healing benefits. This takes a bit of maths and you will need to work out the volume of the individual moulds and dose according to your supplement’s directions. It can help to mix the powder into just a little liquid before adding, to avoid lumps.
