Rogan Josh

A great family meal and an introduction to some more adventurous flavours for little ones, this rogan Josh Recipe is very flexible. Include cayenne and chili for heat, or keep it mild. For those who are still discovering their palette for spices, add a little extra yoghurt when serving.

INGREDIENTS

2 teaspoons ground cardamom

2 teaspoons ground cumin

2 teaspoons ground coriander

500g diced lamb

20g ghee

2 tablespoons olive oil

2 medium brown onions , sliced thinly

4cm piece fresh ginger , grated

4 cloves garlic, crushed

2 teaspoons sweet paprika

½ teaspoon cayenne pepper(opitional- this will make it spicy)

½ cup (125ml) beef stock

425g can crushed tomatoes

2 bay leaves

2 cinnamon sticks

200g plain greek yogurt 1 fresh long red chilli, sliced thinly (optional)



METHOD

  1. Combine cardamom, cumin and coriander in medium bowl, add lamb; toss lamb to coat in spice mixture.
  2. Heat ghee and half of the olive oil in large deep saucepan; cook lamb, in batches, until browned all over.
  3. Heat remaining oil in same pan; cook onion, ginger, garlic, paprika and cayenne over low heat, stirring, until onion softens.
  4. Return lamb to pan with stock, undrained tomatoes, bay leaves and cinnamon.
  5. Add yogurt, 1 tablespoon at a time, stirring well between each addition; bring to a boil. Reduce heat; simmer, covered, about 1½ hours or until lamb is tender.
