Ingredients:

  • 2 cups spelt flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated apple (about 2 medium-sized apples)
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the spelt flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, mix together the maple syrup, melted coconut oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
