Rainbow Salad

This is the easiest recipe around! A bright combination of nutritious veggies with the comfort of traditional coleslaw. Use this recipe for afresh accompaniment to a meal or put it on a wrap with cooked, chicken or halloumi and a little sweet chilli sauce… delicious!


INGREDIENTS

  • 2 tablespoons whole egg mayonnaise (sub greek yoghurt if preferred)

  • 2 tablespoons apple cider vinegar 

  • Salt and pepper to taste

  • 3 medium carrots grated on a coarse grater

  • ½ teaspoon cumin seeds (optional)

  • 1/4 white cabbage, grated or finely shredded

  • 1/4 red cabbage, grated or finely shredded

  • 1 medium raw beetroot, grated

  • 2 small spring onions, finely sliced

  • 4 small radishes thinly sliced (optional)

METHOD

Place the mayonnaise, vinegar, salt and pepper in a large bowl and stir to combine.

Add the grated carrot and cumin and stir well.

Add the beetroot, cabbage, spring onions and radishes, and stir again`

Double batch this recipe for next day lunches!

Tip: use a food processor or electric grater to make this super speedy!
