Banana Buckwheat Pancakes

Everybody loves pancakes! Here is my recipe for a wholesome but fun start to the day. Make into mini pancakes and add to lunchboxes for morning tea too!


INGREDIENTS

  • 1.5 Cups Milk of Choice (I used dairy)

  • 2 eggs

  • 2 Bananas (slightly unripe is even better)

  • 1 tsp Vanilla powder

  • 2 tbsp ghee- melted (extra for frying)

  • 2 cups Buckwheat Flour

  • 1 tsp Baking Powder

  • Pinch Sea Salt

METHOD

  1. Heat a fry pan on low heat to warm up (if you're not using cast iron, heat it to medium).

  1. Add the banana, eggs, ghee, milk, and vanilla to a blender and whizz until smooth. Add the flour, salt, and baking powder to the blender and mix on low until combined.

  2. Once the pan is warm, add a little ghee and two tablespoons of batter. Flip the pancake once bubbles begin to appear on the top and it begins to lose its shine.
