Banana Buckwheat Pancakes
Prep 3m | Total 20m | Serves 4
Everybody loves pancakes! Here is my recipe for a wholesome but fun start to the day. Make into mini pancakes and add to lunchboxes for morning tea too!
INGREDIENTS
1.5 Cups Milk of Choice (I used dairy)
2 eggs
2 Bananas (slightly unripe is even better)
1 tsp Vanilla powder
2 tbsp ghee- melted (extra for frying)
2 cups Buckwheat Flour
1 tsp Baking Powder
Pinch Sea Salt
METHOD
Heat a fry pan on low heat to warm up (if you're not using cast iron, heat it to medium).
Add the banana, eggs, ghee, milk, and vanilla to a blender and whizz until smooth. Add the flour, salt, and baking powder to the blender and mix on low until combined.
Once the pan is warm, add a little ghee and two tablespoons of batter. Flip the pancake once bubbles begin to appear on the top and it begins to lose its shine.
