Apple & Vanilla Bircher with Yoghurt

This bircher muesli is not only nourishing and delicious but is made ahead- saving you so much time on busy mornings!


INGREDIENTS

  • 1 cup organic rolled oats

  • 1 cup of spring/ filtered water

  • ½ teaspoon vanilla bean powder

  • 1 apple grated with skin

  • 1 tablespoon lemon juice

  • 3 tbs extra virgin coconut oil (liquid)

  • 2 cups of organic greek yoghurt

  • 1 tablespoon of raw honey

  • ½ cup desiccated coconut

  • 2 tbsp chopped raw almonds

  • 2 tbsp hemp seeds

  • 2 tbsp sesame seeds

  • 3 tbsp chia seeds

  • A pinch of natural salt

  • ½ tsp cinnamon powder

METHOD

Combine oats, water, vanilla, apple, lemon juice, coconut oil, yoghurt and honey in a medium bowl. Add remaining ingredients, and mix well. 

Leave soak overnight and enjoy the next morning!

RECIPE NOTES

Will keep in the fridge for up to 3 days.

Serve with extra yogurt and fresh berries if desired.

You can make this in jars for a super-quick, grab-and-go option.

For a vegan option, use coconut greek style yoghurt and replace hone with maple syrup.
