Super Greens Pesto

My super greens pesto is an almost sure-fire way to get even the most particular tastebuds eating their greens! It is very versatile and can be used as a dip, or even to dress pasta.
INGREDIENTS
4 Cloves garlic
4 cups packed kale
2 cups of fresh herbs (I use basil, parsley, and a little oregano)
1 1/2 cups of hemp seeds
1/4 cup lemon juice
1 teaspoon sea salt
1/2 - 1 cup of extra virgin olive oil
1 cup grated parmesan cheese
METHOD
Peel the garlic cloves and mince in food processor.
Add the kale, hemp seeds, lemon juice, parmesan, and salt and turn on processor.
As it is processing drizzle in the olive oil, scraping down the sides as needed, until pesto has reached your desired consistency.
RECIPE NOTES
For pasta:
Once pasta is cooked al dente, drain and reserve a few ladles of the pasta water
stir through desired amount of pesto and add reserved water as needed
