Ingredients:

  • 2 cups gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/4 cup ghee, melted
  • 1/4 cup dairy milk (or your preferred dairy-free milk)
  • 1 cup grated zucchini
  • 1/2 cup chopped cooked bacon
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/2 cup shredded Gruyere cheese

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour blend, baking soda, and salt.
  3. In a separate bowl, beat the eggs. Add the melted ghee and dairy milk, and mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Add the grated zucchini, chopped bacon, parsley, green onions, and shredded Gruyere cheese to the batter. Stir until evenly distributed.
  6. Scoop the batter into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
