- 2 cups gluten-free flour blend
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 large eggs
- 1/4 cup ghee, melted
- 1/4 cup dairy milk (or your preferred dairy-free milk)
- 1 cup grated zucchini
- 1/2 cup chopped cooked bacon
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/2 cup shredded Gruyere cheese
Instructions:
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, whisk together the gluten-free flour blend, baking soda, and salt.
- In a separate bowl, beat the eggs. Add the melted ghee and dairy milk, and mix well.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
