Ingredients:

  • 2 medium potatoes, cut into cubes
  • 2 x 120g cans of mackerel, drained
  • 1 teaspoon paprika
  • 2 sprigs of spring onion, finely sliced
  • 1/2 cup parsley, roughly chopped
  • Salt and pepper, to taste
  • 2 tablespoons extra-virgin olive oil

Instructions:

  1. Boil the potatoes until tender, about 10-15 minutes. Drain and transfer to a mixing bowl.
  2. Flake the drained mackerel into small pieces and add to the mixing bowl.
  3. Season with paprika, spring onion, parsley, salt, and pepper. Mix well.
  4. Shape the mixture into patties.
  5. Heat olive oil in a skillet over medium heat. Cook the fish cakes for 3-4 minutes on each side, or until golden brown.
  6. Serve hot and enjoy!
