Ingredients:
- 2 medium potatoes, cut into cubes
- 2 x 120g cans of mackerel, drained
- 1 teaspoon paprika
- 2 sprigs of spring onion, finely sliced
- 1/2 cup parsley, roughly chopped
- Salt and pepper, to taste
- 2 tablespoons extra-virgin olive oil
Instructions:
- Boil the potatoes until tender, about 10-15 minutes. Drain and transfer to a mixing bowl.
- Flake the drained mackerel into small pieces and add to the mixing bowl.
- Season with paprika, spring onion, parsley, salt, and pepper. Mix well.
- Shape the mixture into patties.
- Heat olive oil in a skillet over medium heat. Cook the fish cakes for 3-4 minutes on each side, or until golden brown.
- Serve hot and enjoy!
