Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 1 medium onion, diced
  • 6 cloves garlic, sliced thin
  • 1 small head fennel, diced
  • ¼ teaspoon red chili flakes (optional)
  • 2 large roma tomatoes, cored and chopped, with their juices
  • 1 teaspoon sea salt, or to taste
  • 1 cup dry white wine
  • 250g Potatoes, peeled and diced
  • 1 tablespoon lemon juice
  • 1 kg whiting, skinned, cut in 12 pieces
  • 6 basil leaves, torn
  • 1 cup whole egg mayonnaise

Instructions:

  1. First, heat up some oil in a medium-sized saucepan or casserole over medium heat.
  2. Stir in some onions and garlic and cook them until they're soft but not brown.
  3. Add some fennel and cook for a few more minutes until it's softened.
  4. Add some chili flakes, tomatoes, and salt, cover the saucepan and let it cook for around 10 minutes.
  5. Pour in some wine, add 2½ cups of water, and bring it to a simmer.
  6. Add some potatoes and cook for another 6 minutes or so, until the potatoes are tender.
  7. Taste and adjust the seasoning by adding salt and pepper.
  8. Finally, add some lemon juice.
  9. For the fish, season it with salt and pepper, and place it in the stew.
  10. Let it simmer on low heat, covered, for about 5 minutes or until the fish is cooked through.
  11. While the fish is cooking, warm up some soup plates.
  12. Once the fish is done, place it in the warm soup plates.
  13. Remove the saucepan from heat, stir in some basil just to wilt it, and divide the soup among the 6 plates.
  14. If you'd like, serve some spiced mayonnaise on the side. Enjoy your delicious meal!
