Ingredients:

  • 1.5 kg (3.3 lbs) pasture-raised chicken, cut into pieces
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 carrots, peeled and sliced
  • 2 red bell peppers, sliced
  • 1 zucchini, sliced
  • 400g (14 oz) can of diced tomatoes
  • 1 cup chicken broth (preferably homemade)
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cayenne pepper (optional, adjust to taste)
  • Salt and black pepper to taste
  • Fresh coriander, for garnish
  • Lemon wedges, for serving

Instructions:

  1. In a large fry pan over medium heat, warm a tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Transfer the onion and garlic mixture to the slow cooker. Add the chicken pieces, sliced carrots, bell peppers, zucchini, diced tomatoes, and chicken broth to the slow cooker.
  3. In a small bowl, combine the ground cumin, coriander, turmeric, cinnamon, paprika, ginger, cayenne pepper (if using), salt, and black pepper. Mix well to create a spice blend.
  4. Sprinkle the spice blend evenly over the chicken and vegetables in the slow cooker. Gently stir everything together to ensure the spices are well distributed.
