Ingredients:

  • 1–2 tablespoons olive oil
  • 1/2 an onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon smoked paprika
  • 1 tablespoon chopped rosemary, sage, and thyme
  • 2 medium tomatoes, diced with their juices (or 1 14-ounce can diced tomatoes)
  • 225 grams dry butter beans or cannellini beans, soaked, rinsed, and drained
  • 3 cups stock or broth (chicken or vegetable)
  • 1/2 teaspoon sea salt

Instructions:

  1. **For the Fish:** - In a frying pan, heat the olive oil and sauté the diced onions for 3 minutes over medium-high heat. - Reduce the heat to medium and add the minced garlic. Sauté until fragrant and golden, stirring often for about 3 more minutes. Adjust the heat as needed to prevent burning.
  2. Transfer the contents of the pan, along with all the remaining ingredients, to your slow cooker.
  3. Cook the mixture for 8 hours on the low setting.
  4. In the morning, give the beans a gentle stir. If the consistency is too thick for your liking, you can add a little more stock or broth to achieve your desired texture.
