Ingredients:

  • 2-3 kg grass-fed beef bones
  • 4 liters filtered or spring water
  • 2 tablespoons apple cider vinegar
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 4 cloves garlic, crushed
  • 2 bay leaves
  • Fresh herbs (thyme, parsley, rosemary), tied together with kitchen twine
  • Salt and pepper, to taste

Instructions:

  1. In a large stockpot, place the beef bones and cover with filtered or spring water. Add apple cider vinegar and let it sit for 1 hour. This helps extract minerals from the bones.
  2. Bring the water to a gentle boil, then reduce the heat to low. Skim any impurities that rise to the surface.
  3. Add the onions, carrots, celery, garlic, bay leaves, and fresh herbs to the pot.
  4. Simmer the broth on low heat, partially covered, for 12 to 24 hours. This long cooking time allows for the extraction of flavors and nutrients from the bones.
  5. Periodically skim off any foam or fat that accumulates on the surface.
  6. After simmering, remove the bones and vegetables from the broth using a slotted spoon or strainer.
  7. Season the broth with salt and pepper to taste.
  8. Allow the broth to cool, then strain it through a fine-mesh sieve or cheesecloth to remove any remaining solids.
  9. Store the nourishing beef broth in airtight containers in the refrigerator for up to 4 days, or freeze for longer storage.

Optional Instant Pot Directions:

  1. Place the beef bones, filtered or spring water, apple cider vinegar, onions, carrots, celery, garlic, bay leaves, and fresh herbs into the Instant Pot.
  2. Secure the lid and set the Instant Pot to manual high pressure for 120 minutes.
  3. Allow the pressure to release naturally for at least 15 minutes, then manually release any remaining pressure.
  4. Carefully remove the bones and vegetables from the broth using tongs or a slotted spoon.
  5. Season the broth with salt and pepper to taste.
  6. Strain the broth through a fine-mesh sieve or cheesecloth to remove any remaining solids.
  7. Store the nourishing beef broth in airtight containers in the refrigerator for up to 4 days, or freeze for longer storage.
