Lunchbox Sausage Rolls

These mini sausage rolls are the perfect size for lunchboxes, or can be served freshly baked for a warming snack or quick dinner.

When choosing pastry I highly recommend that you avoid hydrogenated fats, which are in most pre-made pastries. I always choose this one because it contains only butter, flour, salt and vinegar- it is the only one I know of so far.

If you would like to try you hand at homemade pastry this is an easy one.

INGREDIENTS

2 sheets puff pastry at room temp

300g grassfed beef mince 

1 brown onion finely diced

1 carrots peeled and grated

1 zucchinis grated

½ teaspoon oregano

½ teaspoon thyme

3 teaspoon tomato paste

a pinch of salt and pepper

1 egg lightly whisked

1 tsps milk for glazing



METHOD

  1. Preheat ovento 200c
  2. Combine all the ingredients except the puff pastry and milk. Mix until well combined.
  3. Place a large sausage of the meat mixture the full length of the pastry. Approx 5 cm wide, 2.5 cm high. Roll the pastry until you reach the other end and press the pastry down to close.
  4. Cut the log into 15cm rolls- You can now freeze for another time, or bake.
  5. To bake, brush with a little milk (optional) and place in preheated oven (200c) for approx 20 minutes or until pastry is golden and puffed.

Note: Freeze: put the rolls well spaced on a baking tray until solid then move to containers. Bake from the freezer at 210 degrees, brushing first with milk. Bake for approx 20-25 minutes, or until the pastry is golden.
