Lamb Tray Bake

INGREDIENTS
8 lamb chops
300 g (10 oz.) sweet potato, scrubbed and cubed
2 large carrots chopped
2 zucchinis chopped
1 head broccoli chopped
12 cherry tomatoes (leave on the vine if they are)
1 red onion chopped roughly
2 garlic cloves crushed
2 tbs olive oil
1 tsp oregano
1 tsp thyme
1 tsp rosemary
salt and pepper
A large bunch of fresh mixed herbs such as parsley and basil, chopped.
METHOD
Preheat oven to 180°C.
In a large deep baking dish place all of the vegetables including the garlic and drizzle with olive oil.
Place the lamb chops on top of the veggies.
Toss through the dried herbs along with salt and pepper.
Place into the oven for 30 minutes, turn over the lamb and veggies the pop back into the oven for a further 45 minutes or until lamb has browned and the vegetables are soft.
Just before serving sprinkle the tray with fresh herbs.
