Eggs Three Ways

Eggs are my go-to for a quick, yet nourishing start to the day- which is why you’ll find them in your meal plan several times a week!

Besides being a powerhouse of nutrients, eggs are utterly versatile and most kids will love them in one way or another.

Here I have provided 3 of my favourite and most nutritious ways to have eggs in the morning. Keep some of the extra ingredients such as on hand such as quark or goats cheese as well as some fermented veggies for a super quick power breakkie!

Serve with fresh sourdough or your favourite paleo style bread if desired.

 

Soft boiled eggs w toast soldiers &/ asparagus for dipping, and cultured veg

Place your soft boiled egg in your favourite egg cup, crack the top and dip in your buttered sourdough toast and steamed asparagus.

(adults: 2 eggs each, Children 1 egg each)

Medium boiled egg (prepared the in advance in necessary), fresh curd/ quark or goat's cheese, tomato and cucumber slices and cultured vegetables drizzled with olive oil

Lightly pan-fried eggs served on seasonal vegetables

Sauté seasonal vegetables in a little butter/ ghee /coconut oil (I also use leftover roast veggies here). Once the veggies are cooked, crack 2 eggs on the top of the vegetables, place lid on pan and switch off heat. Leave for 5-7 minutes to allow egg to cook in residual heat.
