Coconut & Black Rice Pudding

INGREDIENTS

  • 110g soaked over night and rinsed black rice (or wild rice)

  • 240ml coconut milk

  • 240ml water

  • 1tsp cinnamon

  • 1/2 tsp ground cardamom (optional)

  • 2 tbs honey or maple syrup (optional)

METHOD

1. Bring rice, liquids and spices to the boil over medium heat _
2. Cook for 15 minutes until tender, stirring often to prevent sticking (cooked _black rice should be chewy with the milk and water thickened and ‘sticky’)

Serve in small rice bowls and top with nuts, seeds, and/or fresh fruit
