Chorizo Rice

Ingredients:
- 400g Chorizo
- 2 cups basmati rice, rinsed
- 1¾ cups chicken stock or broth
- ¼ cup water
- 3-4 Saffron strands
- 1 brown onion, finely diced
- 4 garlic cloves, minced
- 2 tbsp paprika
- ½ tsp salt
- 2 tsp fresh oregano
- 1 can cherry tomatoes
- ½ cup chopped parsley
- Olive oil
- Lemon wedges to serve
Instructions:
- Add saffron to ¼ cup of warm water, cover, and allow to soak.
- In a large heavy-based pot, fry chorizo until well-cooked. Remove chorizo and set aside to cool slightly.
- In the same pan, reduce heat to medium, add a little olive oil if needed, and sauté onions until softened. Add minced garlic, stir, and turn off the heat. Stir in paprika and salt.
- Remove saffron strands from the water and add the saffron-infused liquid to the pot along with the rice and chicken stock. Bring to a simmer.
- Cover the pot with a tight-fitting lid, reduce heat to medium-low, and cook for 13 minutes without lifting the lid.
- While the rice is cooking, slice the chorizo into 1-2cm pieces.
- After 13 minutes, quickly check to ensure all liquid is absorbed by tilting the saucepan and taking a brief peek. Immediately cover the pot again.
- Remove the pot from the heat and let it sit, covered, for 5 to 10 minutes. Then, fluff the rice with a fork and add cherry tomatoes, sliced chorizo, and fresh parsley.
- Serve the chorizo rice with a drizzle of olive oil and lemon wedges on the side.
